I was bored the other evening so decided to make some quick brownies..just to kill time! i used a recipe that said these were the best cocoa brownies. so i did some changes to the recipe and was quite pleased with the result! my first brownies made from scratch! For some quick brownies, this is a good start.
Here’s the recipe for all you desert freaks..like me! 🙂
10 tablespoons of unsalted butter
1 1/4 cups white sugar
3/4 cup + 2 tablespoons unsweetened cocoa powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract (i used vanilla flavored essence)
2 cold large eggs
1/2 cup all-purpose flour
2/3 cup walnut (my addition)
So to start with, first sift the flour and cocoa powder and keep it aside. In a heat proof bowl, mix the sugar, cocoa powder, salt and butter. Set this bowl in a wide skillet of barely simmering water. stir from time to time until butter is melted. The mixture should be smooth and a bit ‘shiny’ but just hot enough for you to put your finger in it and remove it quickly. Remove it from the skillet of water and set it aside until it is just warm.
Next, stir in the vanilla extract, one egg at a time and stir it vigorously with a wooden spoon. The batter should be thick, smooth and shiny. Now add the flour and beat it well till the flour is mixed well. Now add the additions (walnuts, choc chips etc). Thats it!
Now spoon it in a baking tray lined with baking paper. Bake in a pre-heated oven for 20-25 mins or maybe a bit more depending on the oven temp. Ideal temp is between 150-160 deg.
