Vegetable Fritters are an easy and delicious way to make vegetables appealing to those fussy eaters! Hide heaps of veggies in these fritters and you will have empty plates every time! A great after-school snack for toddlers. This is one of the best ways to get B eat his potatoes!

Ingredients

¼ cup flour

1 egg

2 tbsp milk

¼ cup grated cheese

¼ cup chopped & cooked/boiled veggies (grated carrots, potatoes, peas, corn, broccoli finely chopped..pretty much all the veggies in the fridge)

2 tbsp chili sauce (or a sauce of your choice for seasoning)

butter or oil for cooking

Method

1. Beat together flour (you can also use the pancake mix you get in supermarkets. i used Edmonds Brand) and egg with two tablespoons of milk, until it is a reasonably thick, smooth batter (add a little more add milk if necessary).

2. Add cheese and veggies to mixture, combine well. Add your choice of sauce or seasonings.

3. Heat oil or butter in mid-heat frypan. Drop tablespoon-lots of fritter mix into pan.

4. Flip over fritters when bubbles appear on top and bottom is golden.
