This recipe gives a nice twist to the Creamy Rice Fruit Pudding for kids. along with the fruits, this rich, creamy rice dish includes dry fruits and condiments like cloves, bayleaf, cinnamon and cardamoms. new and unique flavours are always irresistible for kids. B loved it. yay one more dish added to his menu!

Ingredients

1 tbsp ghee

3 cloves

1 inch piece cinnamon stick

1 bayleaf

3 cardamoms

1 cup mixed fresh fruit, cut into cubes

2 cups boiled/steamed rice

2 tbsp chopped mixed nuts (almonds, walnuts, raisins etc)

2 tbsp rose water

1 tsp sugar

1 tbsp fresh cream

¼ cup milk

salt to taste

Method

1. Heat the ghee in a pan, add the cloves, cinnamon, cardamom and bayleaf and sauté for a few seconds.

2. Add the mixed fruits and sauté for another minute.

3. Add the rice, mixed nuts, rose water, sugar, cream, milk and salt. Mix well and cook for 4 to 5 minutes. Serve immediately.

I loved these biscuits as a child. i still eat them. i would eat the whole biscuit and leave the jam for the last. whereas B does just the opp. we all have our different ways of munching it, but love these biscuits nonetheless. never knew they were so easy to make. just 5 ingredients and you can relive your childhood! Try it, they turn out yum!

¼ cup rice flour, sieved

²⁄3 cup plain flour, sieved

¼ cup castor sugar

125g cold butter, chopped

2 Tbsp strawberry jam, or jam of your choice

Method

1. Preheat oven to 160°C. Line two baking trays with baking paper.

2. Place flours, sugar, butter and a pinch of salt in a food processor and pulse until the mixture begins to form a ball. Turn mixture out onto a flat surface.

3. Knead dough until it comes together, then roll out onto a lightly floured surface to a 1cm thickness.

4. cut flower shapes into dough using a flower-shaped cookie cutter. While cutter is in dough, use your thumb to create a dimple in the centre of the biscuit (see Notes). Repeat until all the dough is used. Place biscuits on lined trays, leaving a little space between each. Fill dimples with jam.

jam drops5. Bake in oven for 30 minutes or until lightly golden, swapping trays around after 15 minutes. Remove biscuits from oven and leave to cool completely.

Notes-

1. Making the dimple while the cutter is still in the dough helps the biscuit keep its shape.

2. Store jam drops in an airtight container and they will last for up to five-six days.

July – Aug ’14

was a socially active month for B. playgroup in morning, Markaz in evening. he loved it! playing with other kids, screaming, running around, and ignoring his mummy papa were some of his 20th month’s highlights!

1st time i saw a possessive side of B. he got all charged up when he saw a 11-12 month old touching my bag. he immediately got up and pulled the kid’s hand away, carried my heavy bag and kept it in my lap (all the while screaming mamma!) and sat in front of it, guarding it! 🙂 Sounds cute and brings a smile now but at that moment it was impossible to make B understand that the kid is not trying to steal my bag!

IMG_5978 copyhe’s also very possessive about his stuff. well maybe possessive is not the right word, but lately its not easy letting him to share his toys or food with other kids. sometimes when told twice or thrice, he will share but other times its just an outright no and tantrum. hope this is just another toddler-phase because it gets difficult to stop him from playing with kids, whom he in return does not share his toys with. although there were a few who he gladly shared his toys and food with in Markaz. Hussain and Mufaddal being his buddies. Zahra being his best friend. B hugged and kissed her on Eid day! how kids sense its the last day they will be seeing each other in Markaz. Cute!

B was down with Croup last month. that’s random fever and cough lasting for 5-7 days. Viral and contagious. happy to know its the last month of winter!

mischief, volume, laughter and vocabulary, increasing by the day! you ask him who are you and he replies cheeky! his name is Babu, teddy’s name is Ted, mummy’s name is Nish but papa’s name is Muh-papa (he said my name before his papa’s..yess!)!

i personally think this is the best age. its the parrot phase where B keeps repeating everything he hears, he entertains us 24/7, communicating with him (and vice versa) is much easier now than a year back. he helps with the clean up of the mess he makes. yet the house looks like a battle ground most of the time. and at the end of the day when i fling him on the sofa (he loves being thrown around), its just going to release a roar of laughter! and then B asking for some more!

June – July ’14

what an eventful month this was! phew!

will never forget the date..it was 19th june 2014 5.10pm when B touched the hot iron with his right hand! to see if it REALLY was hot or mummy just keeps bluffing! that evening followed by 3 other nights was a living nightmare for us. he had a huge water boil on his palm which they punctured after 2 days (and me screaming at the docs for why they wasted the 2 days is another story!). Alhumdolillah his hand is healing perfectly. But my B was the star for taking it all up so bravely! and now he just refuses to enter the room when i am ironing, screaming hot hot and walking out! its cute how he still blows on his hand when asked about his injury.

and just when the docs were ready to remove his bandage for good, he gets school sores! and so to avoid the infection entering the wound, we had to bandage it up again. one week at home, no playgroups, music class or gym! that was a long week for us.

hmmm..apart from this i think the rest of the month went well. with B learning more words, talking more, screaming more. he now says alphabets from A to K. his new obsession is trains. he wont let anyone at the playgroup touch the train set. likes doing art and crafts too. painting, stamping, coloring. his first craft project was a glittered butterfly, now stuck on our fridge.

i had never made oatmeal cookies. for that matter i dont think i had even tasted them before. until last weekend. i was actually searching for healthy snack ideas for B and found this. super healthy, super yum, for both kids and adults.

A must try! Highly recommend it!

1 ½ cups pecans (i used roughly grounded almonds and walnuts)

½ pound unsalted butter, at room temperature

1 cup dark brown sugar, lightly packed

1 cup granulated sugar

2 extra-large eggs, at room temperature

2 teaspoons vanilla essence

1 ½ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon kosher salt

3 cups old-fashioned oatmeal

1 ½ cups raisins

Method

Untitled-251. Preheat the oven to 350 degrees F.

2. Place the pecans on a sheet pan and bake for 5 minutes, until crisp. Set aside to cool. Chop very coarsely.

3. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium-high speed until light and fluffy. With the mixer on low, add the eggs, one at a time, and the vanilla.

4. Sift the flour, baking powder, cinnamon, and salt together into a medium bowl. With the mixer on low, slowly add the dry ingredients to the butter mixture. Add the oats, raisins, and pecans (in my case, almonds and walnuts) and mix just until combined.Untitled-28

Untitled-295. Using a small ice-cream scoop, drop mounds of dough onto sheet pans lined with parchment paper. Flatten slightly with a damp hand. Bake for 12 to 15 minutes, until lightly browned. Transfer the cookies to a baking rack and cool completely.
